The evening started with a Limoncello Spritz and delicious canapés offered by the general manager of the resort and old member of the Chaîne Salvador Lucena.

The dinner that followed did not deceive with first a selection of 3 amuse-bouche: coastal prawn taco, mussel escabeche and stone crab – cumbawa. Then the home-made sourdough bread with seaweed butter and Monterosa olive oil before the main dishes: scarlet prawns with organic vegetables, seaweed rice with razor clam, a lamb terrine with roasted aubergine purée, goat milk from Castro Marim with strawberry and a pear “Rocha” with Port wine and almond.

A first-class dinner, with great wines chosen by Sommelier Fernando Cortês and impeccable service, it should not be long until a Michelin star returns to “Vistas” under Chef André Simão.
