Regarding crafting, i think the workshop house with 2 addons could interfere maybe too much with each of its addon stations (i don't know, i crafted some metal tools myself and started to employ a tool crafter just afterwards so that didn't matter to me much) and doing the carpentry myself, i had nothing to complain in that field as well, but i could imagine, that if you'd like to automate metalworking, carpentry and tool renewal all at the same time, it would not be possible to do so in a simple way. Would rather suggest to not use addons for the workshop, as carpentry, weavery, leathershop, dyery. metalworkery would be good as standalones (unlocking just at the appropriate stage of course) and crafting shop unlocks just the tools/weapons/clothing stuff stage for stage.

Woodcutting, stone, mining carpentry/crafting, gathering, cooking, farming structures all offer good work places for the villagers they really do good stuff, farming ui could be better still to manage the fields, but it's cool so far. Arrows go "bad" fast - bows, too. Iron is a liability as the tools/weapons/armor breaks soon, can't see me wishing to recraft those so soon (except the small axe, small pickaxe, skinning knife, drawing knife).
Feels still a bit tedious on the skin/hide/fur/Linen/ linen thread fabrication side
