    𝗖𝗿𝗲𝗮𝘁𝗶𝗻𝗴 𝗪𝗶𝘁𝗵 𝗖𝘂𝗹𝗶𝗻𝗮𝗿𝘆 𝗟𝗲𝗴𝗲𝗻𝗱𝘀 𝗮𝘁 𝘁𝗵𝗲 𝗠𝗼𝗻𝘁𝗿𝗲𝘂𝘅 𝗝𝗮𝘇𝘇 𝗙𝗲𝘀𝘁𝗶𝘃𝗮𝗹🎵👩🍳 Our Nestlé Professional Corporate Chef Emmanuel Lorieux, collaborated with renowned culinary talents, including two Bocuse d'Or winners and MOF, Michel Roth and François Adamski, as well as the legendary Anton Mosimann and students from the Culinary Arts Academy Switzerland at the prestigious Montreux Jazz Festival. During the event on July 7th, the slow cooked lamb filet with CHEF black garlic paste created by Michel Roth and François Adamski, was a true testament to the artistry and expertise of these culinary masters. Similarly, on July 14th, our Chef joined forces with Anton Mosimann and the talented students from CAAS to prepare a smoked salmon and trout with a CHEF lemon paste dressing. The collaboration was a remarkable showcase of culinary excellence.     We recently spoke with Michelle McCracken, an Accredited Practising Dietitian and Culinary Nutritionist for Nestlé Professional Oceania, about nutrition in food service. 🍎✨ 𝗤: 𝗛𝗼𝘄 𝗱𝗼 𝘆𝗼𝘂 𝗮𝗽𝗽𝗹𝘆 𝘆𝗼𝘂𝗿 𝗻𝘂𝘁𝗿𝗶𝘁𝗶𝗼𝗻 𝗲𝘅𝗽𝗲𝗿𝘁𝗶𝘀𝗲 𝗶𝗻 𝗳𝗼𝗼𝗱 𝘀𝗲𝗿𝘃𝗶𝗰𝗲? As a culinary nutritionist, I work closely with product applications and marketing to deliver innovative new products and reformulate the existing portfolio, while ensuring our products meet internal and external nutrient criteria and are nutritionally competitive. I enjoy working with our chef to develop healthy recipes that meet special dietary requirements, such as gluten free or vegetarian, to inspire our customers to deliver tasty and balanced menus. 𝗤. 𝗧𝗲𝗹𝗹 𝘂𝘀 𝗮𝗯𝗼𝘂𝘁 𝘆𝗼𝘂𝗿 𝗮𝗽𝗽𝗿𝗼𝗮𝗰𝗵 𝘁𝗼 𝗽𝗿𝗼𝘃𝗶𝗱𝗲 𝗻𝘂𝘁𝗿𝗶𝘁𝗶𝗼𝗻𝗮𝗹 𝗴𝘂𝗶𝗱𝗮𝗻𝗰𝗲 𝘁𝗼 𝗰𝘂𝘀𝘁𝗼𝗺𝗲𝗿𝘀? I enjoy visiting customers with our cross-functional team to provide nutrition education to support their business growth. We have a range of practical resources on hot topics such as managing gluten free, developing nourishing menus for people in care, and our nutrition magazine, Nutripro, which encourages health and sustainability on food service menus. 𝗤. 𝗪𝗵𝗮𝘁 𝗮𝗿𝗲 𝘀𝗼𝗺𝗲 𝗼𝗳 𝘁𝗵𝗲 𝗰𝗵𝗮𝗹𝗹𝗲𝗻𝗴𝗲𝘀 𝗳𝗼𝗿 𝗶𝗻𝘁𝗲𝗴𝗿𝗮𝘁𝗶𝗻𝗴 𝗡𝘂𝘁𝗿𝗶𝘁𝗶𝗼𝗻 𝗶𝗻 𝗳𝗼𝗼𝗱 𝘀𝗲𝗿𝘃𝗶𝗰𝗲? We know that Australians and New Zealanders aren’t consuming enough healthy core foods, including vegetables, legumes, and nuts. This is a significant public health challenge, and I think the food service industry can help increase consumption of healthy core foods by offering more on menus. 𝗤: 𝗔𝗻𝘆 𝗮𝗱𝘃𝗶𝗰𝗲 𝗳𝗼𝗿 𝘁𝗵𝗼𝘀𝗲 𝗶𝗻𝘁𝗲𝗿𝗲𝘀𝘁𝗲𝗱 𝗶𝗻 𝗡𝘂𝘁𝗿𝗶𝘁𝗶𝗼𝗻? There are so many exciting opportunities! Beyond clinical and community nutrition roles, you can work in the food industry, marketing, or teaching kitchens. I have a graduate certificate in culinary nutrition science, combining my passion for nutrition with my love for the culinary arts.
